Eric !. If 50 Ohms is suitable for Coaxial cable, but for the PCB outer and inner layers, why is it still used?

What my guess is that a lot of digital communication chips has adopted 50 Ohm as a standard impedance for their communication standard ( some communication standard like DDR use 40-45Ohm as well) which makes it easier for overall adaptation to the other manufacturer's chips. I think this answer's your question
